Best Side Dishes from the Power Pressure Cooker XL

White Rice

Ingredients

  • 2 cups long grain white rice
  • 16 ounces water
  • 1 teaspoon oil
  • Pinch of salt (optional)

Directions

  • Place the inner pot into the pressure cooker
  • Add the rice, water, oil and salt
  • Press the “Rice/Risotto” button once to select “White” (6 minutes)
  • Place lid on the pressure cooker, lock the lid and switch the pressure release valve to closed
  • Once the timer reaches zero, the cooker will automatically switch to “Keep Warm”
  • Press the cancel button to let the steam naturally release
  • When the steam is completely released, remove the lid
  • Fluff rice with a fork and serve

Mushroom Risotto

Ingredients

  • 2 cups risotto
  • 4 cups stock
  • 2 cloves minced garlic
  • 1 onion, diced
  • 1 ounce olive oil
  • 4 ounces heavy cream
  • 2 tablespoons grated parmesan cheese
  • 1 ounce basil
  • 8 ounces crimini mushrooms
  • 4 ounces Sherry

Directions

  • Place the inner pot into the pressure cooker
  • Push the “Rice/Risotto” button and adjust time to 8 minutes
  • Heat the olive oil, sweat the onions and garlic 2 minutes then add mushrooms, cook 3 minutes
  • Add the rice, Sherry and stock, mix to evenly distribute mushrooms
  • Place the lid on the cooker, lock lid and switch the pressure valve to “Closed”
  • Once the timer reaches zero, the cooker with automatically switch to “Keep/Warm”
  • Switch the pressure valve to “Rapid Release”
  • When the steam is completely released, remove lid
  • Pour the heavy cream into the rice mixture and fold in parmesan cheese and basil
  • Serve

Thanksgiving Stuffing

Ingredients

  • 2 baguettes cut into cubes
  • 8 ounces ground sausage
  • 3 stalks celery, diced
  • 5 onion, diced
  • 8 ounces mushroom, quartered
  • 1 large carrot, diced
  • 5 cup chicken stock
  • 4 ounces butter
  • 5 teaspoons poultry seasoning
  • 1 teaspoon thyme, chopped
  • 1 tablespoon parsley, chopped
  • 5 teaspoon salt
  • 5 teaspoon freshly ground black pepper

Directions

  • Place inner pot into the pressure cooker
  • Press the “Soup/Stew” button to set for 10 minutes
  • Melt butter, add ground sausage, sauté until brown
  • Add vegetables, sauté for 4 minutes, add seasonings
  • Add stock, fold in cubed baguettes
  • Secure the lid on the cooker, lock the lid and switch the pressure release valve to “Closed”
  • Once the timer reaches zero, the cooker will automaticall switch to “Keep Warm”
  • Press the cancel button and switch the pressure release valve to “Open”
  • Do not remove lid until steam is completely released
  • Serve

Loaded Mash Potatoes

Ingredients

  • 4 pounds red potatoes, quartered
  • 5 cups chicken stock
  • 1 teaspoon salt
  • 5 teaspoon pepper
  • 1 cup heavy cream
  • 8 ounces cheddar cheese shredded
  • 6 slices bacon, cooked and diced
  • 2 ounces butter
  • 1 tablespoon parsley chopped
  • 2 tablespoons scallions

Directions

  • Place the inner pot into the pressure cooker
  • Press the “Soup/Stew” button to set for 10 minutes
  • Add the potatoes, stock, salt and pepper to the inner pot
  • Secure the lid on the cooker. Lock the lid and switch the pressure release valve to “Closed”
  • Once the timer reaches zero, the pressure cooker will automatically switch to “Keep Warm”
  • Press “Cancel” and switch the pressure release valve to “Open”
  • When the steam is completely released, remove the lid
  • Mash the potatoes and add the cream and butter
  • Fold in the rest of the ingredients
  • Serve
